The entrepreneurial spirit is alive with the Cooperativa de Caficultores de Dota (CoopeDota). Since its formation in 1960, the cooperative has grown to 850 members who not only cultivate family farms, but also roast coffee, operate a coffee shop and run a hardware store. Environmental sustainability is a top priority for CoopeDota, which has recently become the world's first certified carbon-neutral coffee producer.
CoopeDota provides wet milling services to its members using an eco-pulper, which reduces water consumption dramatically. Eco-pulpers clean the fruit from the seed and can be adjusted to any desired amount of mucilage (or "honey"). This gives producers some control over the acidity and fruitiness of the final coffee. This is a sweet and approachable cup with notes of milk chocolate and marzipan.
